Lots of requests. So here’s a good start on the sauce.
Measurements are still being worked and kind of “winged” it.
– Small can of pineapple juice – almost equal part of apple cider vinegar with habanero sliced soaked overnight – two habanero’s cut up – a few pineapple chucks – corn starch
Simmer juice, vinegar, habanero and pineapple chucks until flavors merge. I blended and then returned to the sauce pan before adding a corn starch slurry to help thicken.
At the moment still playing a little with proportions, but could use more habanero for kick. And not sure if I need to reduce more or adjust the slurry to help thicken it.
As for the wings, just season them to taste. Flour with spice mix, creole as a short cut and fried in 375° F veg oil for 5-7 mins.
