Serves 4-5
For the vinaigrette:
1/4 cup olive oil
3 tbsp red wine vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
3/4 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
For the salad:
1 can chickpeas, drained and rinsed
1 1/2 cups diced mini cucumber
1 1/2 cups quartered cherry tomatoes
1 diced bell pepper
1/2 cup diced Kalamata or castelvetrano olives
Optional: 1/4 cup finely chopped pepperoncini
3 oz crumbled feta cheese
