NEW ORLEANS (press release) – Saint John is set to host a Carnivore’s Delight Wine Dinner on Thursday, March 19, at 6 p.m. The evening will feature four courses (all featuring meat) with wine pairings for $125(++), highlighting how unexpected pairings can elevate the overall experience of each course.

Course 1: Sea & Land:

Tuna carpaccio, marinated fennel, beef tartare, dill Dijon-naise, batter fried caperberry. 

Wine: Cote Mas Cr?mant Limoux Brut

Course 2: Marrow & Roe:

Roasted marrow canoe, blue crab ravigote, grilled ciabatta, micro arugula. 

Wine: Gunderloch Riesling “Fritz”

Course 3: Lamb Osso Buco en Bianco:

Braised lamb shank, prosciutto and pistachio gremolata, sweet pea polenta, natural jus. 

Wine: Tablas Creek Paso Robles Patelin Blanc. 

Course 4: Millionaire Cookies

Wine: Famiglia Carafoli “Nicchia” Lambrusco.

Candied bacon, chocolate chips, pimenton-maldon salt.
