Chef Francesco Curci is set to open Morsetto, bringing with him a concept inspired by the flavors and traditions of southern Italy—specifically the region of Puglia.

Curci has spent more than a decade sharing authentic Italian cuisine with diners across New Jersey. His early work in Ridgewood as both chef and manager helped him build a strong connection with the community, before later becoming the owner of Apulia in Hoboken, a restaurant that grew into a destination for guests seeking traditional Italian cooking.

After several successful years in the United States, Curci returned to Italy to spend time closer to family and reconnect with the culinary traditions that shaped his cooking. During that time, he rediscovered the ingredients, techniques, and culture of southern Italy—while also realizing the strong connection he had built with the American dining community.

While back in Italy, Curci learned that the space housing Piccolo Bistro, a longtime Ridgewood restaurant space he had admired years earlier, had become available. The opportunity sparked the idea of returning to the town where his U.S. culinary journey first gained recognition.

Curci soon partnered with longtime friend and business collaborator Sal Latella, and together the two decided to take over the space and begin a new chapter.

Their vision centers around the cuisine of Puglia, a southern Italian region known for its olive groves, fresh seafood, handmade pastas, and ingredient-driven cooking. The menu is expected to highlight authentic recipes rooted in that tradition, with handmade pasta, seasonal vegetables, fresh seafood, and carefully selected olive oils playing a central role.

The goal, according to the team, is to create a welcoming restaurant that reflects the warmth and hospitality of Italian family gatherings while remaining deeply connected to the Ridgewood community.

“Returning to Ridgewood feels like coming home,” said Chef Francesco Curci. “This town supported me at the beginning of my journey in the United States. Now I want to give something back by sharing the food and soul of Puglia with the people here.”

Latella echoed that vision, emphasizing a focus on connection and community through food.

The new iteration of Piccolo Bistro aims to blend authentic Italian tradition with a neighborhood restaurant atmosphere—offering a place where guests can gather, celebrate, and experience the flavors of southern Italy.

An official opening date has not yet been announced.
