    This is why I do a thin layer of mayo for crispness and then melt butter in the pan and fry it in that for richness.

    I’m guessing 1 is mayo 2 is butter

    Emusifying Oil, Egg Yolk and Vinegar is fine but don’t compare it to real Butter.

    Butter burns more easily than mayo so I’d say the second pic is butter.

    I use mayo not butter because I don’t buy butter that spreads easily and never will

    So a little lesson, mayo *AND* butter are fats that crisp your bread without burning them.
