2 Tablespoons (30 ml) vegetable oil
1 medium onion , chopped
3 cloves fresh garlic , minced or crushed (or 1 teaspoon garlic powder)
14 ounce can (397 g) artichoke hearts , drained and chopped
10 ounces (284 g) chopped frozen spinach (thawed & drained of excess water)
1 teaspoon (5 ml) kosher salt or sea salt, or to taste
1 teaspoon (5 ml) fresh cracked black pepper , or to personal taste (we like lots)
8 ounces (227 g) cream cheese (1 package)
1/4 cup (56 g) mayonnaise
1 cup (100 g) grated parmesan cheese , (or more for a broiled top)
1/2 cup (120 ml) milk
chips , crackers, or vegetables for dipping
