    I feel like the kimchi would overpower the pastrami and/or the dressing. I could easily be wrong and would love to try it and confirm for myself, though!

    My chef ran this as a blue plate a few years back. Not bad. The gochujang “aoili” did a lot of lifting.

    Kimchi is a great ingredient on sandwiches! It is a good substitute for pickles, makes a yummy spicy mayo, and makes a great cheese toasty. There’s a reason it’s a staple food in Korea!
