Meal Train Series Episode 6: The meal I’ve absolutely made the most for people is some variation of this.

Here’s what I included in this one:
– Arugala
– Greek Yogurt marinated chicken
– Hummus (recipe coming soon)
– Pita (store-bought this time, but @foodbymaria has a delicious one I’ve made before)
– Tomato, cucumber & feta salad tossed with red wine vinegar, olive oil, salt, and pepper
• I also like to include green lentils, and tzatziki if I have time to make it
Dessert:
• Pumpkin cookies that were in my freezer
• Brownie cookies (recipe coming soon!)

For the toddler:
• Trader Joe’s, mac & cheese, and rinsed blueberries

🍋RECIPE: Greek yogurt marinated chicken
INGREDIENTS
2 lb chicken breast or thighs, cut in half lengthways if thick
1/2 cup full fat Greek yogurt
2 tablespoons olive oil
3 tbl lemon juice
3 tbl fresh dill, minced
4 cloves minced garlic
1 tsp sea salt
1/2 tsp black pepper
Optional seasonings (will affect the color): 1 tsp paprika, 1/2 tsp turmeric, 3/4 tsp cumin
Avocado oil for cooking

1. Combine everything in a bowl and cover. Let marinate in the fridge for 2 hours or up to 8.
2. When ready to cook, place a large saucepan over medium high heat.
3. Once the pan is hot, drizzle with avocado oil, and place the chicken on the pan to cook for four minutes each side.
4. If you have a splatter guard, place it on the pan once you turn the chicken over to help it cook all the way through. If you don’t have a splatter guard, place the lid on the pan for the last 1 to 2 minutes of cooking. Chicken is done once it temps 165°F (75°C) in the thickest part.
5. Add more oil to the pan and repeat with the second batch until all of the chicken is cooked.
6. Let rest for five minutes before cutting. If making for a meal train, then don’t cut so it stays warm.
