






Mezze style Sunday, you only have to learn a few dishes like this to increase the amount and variety of vegetables you eat! Plus, most of these keep well in the fridge for a couple of days to have alongside your other meals.
Beetroot Feta salad: sliced cooked or pickled beetroots, crumbled feta, walnuts, mixed seeds, EVOO, salt, drizzle honey
Sautéed greens: Lots of garlic, big bunch kale/greens. Blanche the greens, drain, fry 4-6cloves garlic in EVOO, add the greens, finish with salt pepper and lemon juice
Butter bean salad: butter beans, finely diced red onion, big handful diced parsley, EVOO, salt, pepper, red wine/apple cider vinegar
Spring salad: Small handful blanched spring greens, thin slices courgette (potato peeler works great), blanched peas, small handful almonds, lots of basil, dried chilli flakes/powder to taste, EVOO, salt, pepper, lemon juice
Hummus: cooked chickpeas approx 2 tins,1/3 cup tahini (more if you prefer it), 1-2 garlic cloves, lots EVOO, large pinch cumin, salt, pepper, juice half lemon… blend together to desired consistency. If you want super smooth, creamy hummus, add a splash of cold water halfway through blending
Dukkah roast chicken: chicken (or fish), coated in dukkah (sesame seeds, coriander seed, cumin, hazelnuts, salt, dried garlic, dried thyme, pepper, salt) and EVOO and then roasted or grilled
