Learn how to make authentic Moroccan Harira soup step by step at home. This traditional Moroccan lentil and chickpea soup is rich, comforting, and perfect for Ramadan or cozy family dinners.
Start by finely chopping one onion. Place it in a large pot with 250 grams of veal or lamb cut into cubes. Sauté in a little oil until lightly browned.
Add finely chopped cilantro and parsley, salt, black pepper, ground ginger, and turmeric. Let everything cook together for a few minutes to release the flavors.
Meanwhile, place 4 tomatoes and a piece of fresh celery in a saucepan with water, salt, and pepper. Bring to a boil, then blend until smooth.
Add the previously washed lentils and chickpeas to the main pot, followed by the blended tomato and celery mixture. Add the same amount of hot water, adjust salt, and add ground coriander.
Once the meat and chickpeas are fully cooked, mix 60 ml of water with 3 tablespoons of flour. Stir well until smooth, then slowly pour it into the soup while stirring. Let it simmer on low heat for about 3 minutes until slightly thickened.
