
Smoked a Tri tip this afternoon.
Seasoned with Your Behind BBQ’s Cajun Rub, Flavor Knuckles Carne Asada , & A Light coat of Amplify by Hard Core Carnovore.
Smoked at 250 for an hr, then bumped to 290 for an hour twenty. Spritzed with beef broth & two shots of espresso.

What does the paper do wrapped around it?
Looks excellent
you’ll get more tender pieces if you slice across the grain. Tri tip is a tricky cut because the grain changes direction halfway through
