Beef
Lean beef, cut into 1–1.5 cm cubes – 700 g | 24 oz | 4½ cups US | 4 cups UK
Base
Vegetable oil – 1 tbsp | 3 tsp | 15 ml
Onion, diced – 200 g | 1½ cups US | 1¼ cups UK
Garlic, minced – 3 cloves | 9 g | 1 tbsp
Vegetables
Green bell pepper, diced – 150 g | 1 cup US | ¾ cup UK
Carrot, diced (optional) – 100 g | ¾ cup US | ⅔ cup UK
Spices
Chili powder – 2 tbsp | 6 tsp | 16 g
Ground cumin – 2 tsp | 4 g
Smoked paprika – 1 tsp | 2 g
Dried oregano – 1 tsp | 1 g
Black pepper – ½ tsp | 1 g
Salt – 1 tsp | 6 g
Sauce & Beans
Tomato paste – 2 tbsp | 6 tsp | 30 g
Crushed tomatoes – 400 g | 1¾ cups US | 1½ cups UK
Kidney beans, drained – 400 g tin | 1½ cups US | 1¼ cups UK
Beef stock – 1½ cups US | 1½ cups UK | 360 ml
Optional finish
Brown sugar – 1 tsp | 5 ml | 4 g
Cocoa powder or dark chocolate – ½ tsp | 2 g
Fresh coriander or parsley – 2 tbsp | 6 tsp | 8 g

Hi Rick – yes, it does your head in when there is so much water injected into the meat that you have paid for! A right rip-off.
This recipe is 'proper' and very traditional type of Colarado Chilli con Carne. Mince is a modern thing for chillies… so this harks back to the old cowboy recipes (sorry – I'm a bit of a traditionalist with chillies!) – of course you can make it also very very hot. But this is a nice flavourful and filling dish. I reckon best served with corn bread or flat bread… rice is a 'new' thing 🙂

Rik, you are an amazing chef, rivalling any in some fancy hotel. So many fabulous recipes.
Some alternate things: fry the beef with some cumin and chili rubbed on along with the salt and pepper. Also, not all chili has tomato of any kind in it. The color is powdered chilies, usually of different kinds. This is also the only chili I've ever heard of that has carrots in it. Cocoa is good. So is adding a bottle of good lager (not too hoppy to avoid bitterness).

Mind ya in beef stews I sometimes use a square of galaxy chocolate.
Better still ALDI's cheap dark chocolate. You always make me HUNGRY, please STOP make something AWFUL like ground semolina pudding like we were forced to eat in school 50's and 60's!

Much better than ground beef. Nice fatty streaks in the beef is always more flavour. Sadly beef in Canada has become ridiculous. chicken, pork and turkey have become affordable everyday fare..
I made chilli tonight! I got 5 green chillis I THOUGHT were Jalapeños, but thy weren’t!!! LUCKILY I tasted them 1st, and found thy were HOT as! so I only put in 2 bits BUT when I did the de-seeding, of them they BURNT my fingers! OMG that has NEVER happened to me before! It's been 6 hrs, they are STILL burning! Thankfully i have steroid ointment to rub on them! It's INSANE!!! EVER had that happen to you???
