⭐ * Greek Stuffed Vegetables (Gemistá) A Lighter Mediterranean Classic * ⭐
There is a particular moment when stuffed vegetables come out of the oven, a soft hiss of steam, the scent of dill and mint rising through the kitchen, and suddenly you are no longer just cooking. You are remembering.

In Greece, this dish is called Gemistá (Γεμιστά). It simply means “stuffed.” But what it truly means to me is home. It means summer. It means tomatoes warmed by the sun and herbs chopped generously without fear. Oh my…. how I love fresh Greek tomatoes. They actually smell amazing (nothing like a supermarket tomato for sure.)

Traditionally, Gemistá can be heavy. The are often served with generous glugs of olive oil, sometimes minced meat, sometimes bread for extra crust. Beautiful, yes. But not always aligned with how I want to eat when I am living intentionally, training hard, or simply trying to stay light on my feet.

My version respects tradition, it pays homage to my Yiayiá, but it’s cooked with intent, with purpose.
Less oil. No exagerations. Maximum flavour. Controlled energy.
