

I had a bunch of random things to use up in the vegetable drawer so I decided to make a random skillet and it turned out sooooo good. It made 4 servings that are just over 2 cups of food each.
Ingredients I used:
– 1 lb of ground turkey
– 15 oz can of black beans
– 8.5 oz can of corn
– 1 medium russet potato
– 1 medium zucchini
– 1 small yellow onion
– 2 small roma tomatoes
– 1 large jalapeno
– 2 tbsp of minced garlic
– 12 oz bag of cauliflower rice
I did end up using some salt, pepper and smoked paprika to season it.
The calories are obviously just an estimate. I did weigh the ingredients so they should be somewhat close compared to what I looked up based on their weight.
Just figured I’d share the recipe since it turned out so well and made 4 big servings for less than $10!
