Creamy tiramisu cheesecake bars ♡

*Graham Cracker Crust*
1 and 1/2 cups (180g) graham cracker crumbs (about 12 sheets)
6 tbsp (85g) melted butter (unsalted)
1 tsp instant espresso powder (I use Nescafe Gold)
1 tbsp sugar

♡ Bake in a 9×9 inch pan lined with parchment paper at 350F (177C) for 9 minutes

*Cheesecake*
16oz softened cream cheese
3/4 cup (150g) granulated sugar
1 tsp vanilla
1/2 cup (120g) sour cream (or greek yogurt)
2 large eggs (one at a time- mix after adding each egg)

*Coffee Cheesecake Batter*
1/2 cup of plain cheesecake batter
2 tsp instant espresso powder

*Coffee Soak*
250ml hot water
2 tsp instant espresso powder
14 lady fingers

♡ *Bake the assembled cheesecake at 350F (177C) for 25-30 minutes*
♡ The edges should look set, and the middle should have the slightest jiggle
♡ Let it cool to room temperature and then cover and refrigerate for at least 4 hours (or overnight)

*Mascarpone Whipped Cream*
8oz cold mascarpone
1/2 cup (100g) brown sugar
1 cup (240g) cold heavy cream
1 tsp vanilla

*Topping*
Unsweetened cocoa powder
