  1. Marinade
    1 tb coriander seeds
    2 tsp cumin seeds
    6 green bird’s eye chilies or 3 serrano chilies
    4 garlic cloves
    1/4 tsp ground cardamon
    zest of 1 lemon
    1 c fresh parsley leaves
    1 1/4 c fresh cilantros, stems included
    2 tb fresh mint leaves
    1/2 c extra virgin olive oil
    kosher salt, to taste

    Chicken
    1 pasture-raised chicken, split in half
    kosher salt
    freshly cracked black pepper

    Za’atar Yogurt
    1/2 c plain greek yogurt
    1 garlic clove, grated
    2-3 tsp fresh lemon juice
    2 tsp za’atar
    kosher salt, to taste
