These One Pan Lemon & Oregano Roasted Greek Potatoes are crispy, fluff and packed with bright Mediterranean flavour – and the best part? Everything cooks in just one pan.

No par-boiling, no juggling trays, no complicated prep. Just potatoes, lemon, oregano, garlic and a few simple ingredients roasted together until the potatoes soak up all that incredible flavour and turn golden and crispy on the edges.

This is one of those recipes that proves simple food can be the best food. The potatoes roast directly in a lemony oregano broth, which slowly reduces in the oven and creates that classic Greek taverna-style texture, soft and fluffy inside, crispy outside, and ridiculously moreish.

Perfect as a side for roast chicken, grilled lamb, or honestly just on their own straight from the pan.

4 large Maris Piper Potatoes
2 Lemons (juiced)
2 Tbsp Dried oregano
3 Tbsp Light Olive oil
250ml Chicken or Beef stock

    Also the history of the Maris Piper is pretty interesting… Made (developed) in the UK … by the government organisation, which is now privatised , not sure if they’ve done any further developments on it .

  7. Gonna try this tonight. My missus is greek so she always brings home several bottles of olive oil her mum makes from their own olive trees along with their own oregano and so many other amazing things.

  8. Please continue to show us how much pepper you use. I hate it when people use the automatic pepper grinder and use it for about 1 or 2 seconds. That’s rarely enough pepper unless the recipe is for a single amuse-bouche for an elf!
