I've got quinoa, cucumber, red bell pepper, plum tomatoes, spinach, fresh basil, feta cheese, with a lemon and oregano olive oil dressing. It'll be divided into smaller portions tomorrow ready for me to take to work. I think I need to work on the dressing a bit, but it tastes nice otherwise!

    Throw some beans on there too for a boost of protein and fiber. And beans are great for gut health.

    One of my staple meals for lunch, looks good! I like to add Kalamata olives and banana peppers for an extra flavor boost. Chicken, fish, or chickpeas will add some protein to help keep you full as well.

  3. You need to add some protein. Grilled chicken, chickpeas, cannellini beans or pork souvlaki would be good. Sometimes I buy a rotisserie chicken and then add the meat to salads like this or a Greek salad or spinach salad. Add lots of oregano, some olives and feta. Yum!

    That dressing will come together with practice. The rest looks incredible though! Feta + quinoa + fresh basil is such a winning combo 🫒🧀

  5. it’s kind of a spinoff of tabouleh. I like what you got going though with the quinoa. Look up tabouleh for some ideas. i personally would add A LOT of parsley to this along with mint. i like some lemon peel too.
