I sous vide pork hind legs at 60 degrees for 4 hours. They were too big to fit in the grill, so I cut them up and grilled them, but they ended up steaming.

Why would you think this is a good idea?
Think about pouring pancake batter into a pan that was hot enough to sear. It would instantly burn.
Those things don’t get hot at all.

I suggest getting an IR thermometer and checking the temp on that thing. I use a panini/waffle/grill to sear steaks but mine gets up to 400°

I saw 60 degrees and thought how cold does he keep his house that the sous vide can do 60 degrees? Then realized you meant Celsius which most of the civilized world uses. Gave me concern for your health there for a minute.
