A new restaurant is opening in the city, and it’s bringing with it a taste of Italy that feels both “rooted in tradition and unmistakably Toronto.”

Designed as a “hidden but intentional space,” Pasta Privato is a 30-seat “culinary sanctuary” that can be found discreetly nestled inside a heritage building at 11 Church St.

Officially opening on March 27, Pasta Privato is helmed by chef Michael Angeloni and partners Adam Teolis and Yannick Bigourdan.

“At its heart, Pasta Privato is deeply personal. It’s modern Italian seen through my own lens, marrying traditional roots with the local diversity of Toronto’s culinary scene,” said Angeloni.

“We’ve stripped away the stuffiness of traditional fine dining to focus on what matters: the integrity of the ingredients and a genuine connection to the craft.”

The menu’s culinary framework will highlight cicchetti, antipasti, handcrafted pastas and thoughtfully composed secondi. Dishes will evolve over time to reflect seasonal ingredients and partnerships with local artisanal producers. And diners can enjoy à la carte offerings or an eight-course tasting menu for $125 per person.

For the restaurant’s launch, the menu titled “Un Omaggio” will pay tribute to the mentors, kitchens and defining moments that helped shape Angeloni’s career.

It will include dishes like beef hearts and beets, agnolotti, tagliatelle and more to reflect his time in positions at Splendido, The Black Hoof and more.

“The beef heart and beets dish draws inspiration from traditional Peruvian street food, a concept I was first introduced to while working at The Black Hoof under a fellow sous chef from Peru,” said Angeloni.

“I’ve reimagined the dish in my own style by incorporating Calabrian chili and rosemary, and by layering thin slices of heart onto rosemary skewers rather than using the traditional chunks. It’s a dish that brings back fond memories of one of my favourite kitchens and reflects my passion for honouring and utilizing the often-forgotten parts of the animal.”

And when it comes to the beverage program, Pasta Privato will have a cellar-driven wine list with rare selections. A sommelier will also be available at each service to help guide pairings.

“We wanted to create something that feels like you’ve discovered it,” said Teolis.

“It’s for the guest who wants to know the name of the farm and the story behind the shape of the pasta on their plate. It’s elevated and intentional, but it’s welcoming.”

Aside from their newest pursuit, Teolis, Bigourdan and Angeloni also run Notte Ristorante, formerly known as Amano Trattoria.

In fact, Pasta Privato diners will enter through Notte’s doors at 9 Church St. to access the new ‘hidden’ restaurant.

The trio are also behind Toronto’s Berczy Tavern, along with the Michelin-recommended Restaurant Lucie, The Carbon Bar and The Carbon Snack Bar.

As for the historic structure Pasta Privato is in, it is described as “a carefully restored building, constructed in heavy timber over a hundred years ago when masonry detailing and fine millwork were a building’s mark of distinction,” according to the Architectural Conservancy Ontario.
