Fairly new to the Mediterranean diet. I’ve been trying to make myself like cottage cheese. Cooked it into scrambled with some chia seeds and added tomatoes topped with chia seeds to the side. Delicious!

    The MD diet isn’t a low carb one. Add some nice whole grain toast on the side.

    Watch out eating dry chia seeds. They can rehydrate in your esophagus and cause you to choke

    I love that you have delicious looking tomatoes. Where I live tomatoes are available, but they’re definitely not in season.

    So, what did you think about the cottage cheese mixed in with the eggs?

    You’re going to want to soak chia seeds before eating. They won’t absorb like this, and aren’t meant to be used as a garnish. Love cottage cheese eggs! If you’re trying to eat cottage cheese, I’ve been blending it with frozen fruit and milk for smoothies. You can stir chia seeds in after blending and let sit for 4 hours or overnight in fridge and it’s delicious!

    Technically, looks good, but is missing some whole grains and needs more vegetables.
