


This is my second cake, a lemon cake with lemon buttercream and berry filling. Tried to be pretty basic but still failed to meet my expectations lol.
I made a three layer cake I’m taking to work tomorrow and a half circle cake to eat at home that I already cut into.
Making pretty frosting sure is challenging. Should I make the texture of the frosting for piping designs and for spreading on the cake different? Last time I learned that I made the frosting too stiff and got lots of tips as for how to smooth it and add milk(or cream) to make it softer. This time it kind of felt like I was melting it while using the piping bags and it was almost too soft?
Also was not super impressed with the lemon frosting recipe I used(Sally’s), if anyone has any recommendations!

Omg this looks so tasty! Don’t have any tips I’m still new as well, but I love how vibrant it turned out!
Im also still a beginner, so I dont know how a pro would do this, but I have two different buttercreams for my crumb coats and my actual base layer/piping. Frosting does melt a little in the bag if you hold it a while, so I also like to have separate bags of frosting, on for the base layer, and one chilling in the fridge while I work on the base layer. 😀 I also find it a lot easier to pipe on the base layer, use an offset spatula to spread it to cover the cake, then go in with my bench scraper to smooth everything out. For the bench scraper, I think the smoothing angle depends on whats most comfortable/effective for each person, so just experiment with that a little. But thats just what Ive learned on my own so far
Mock Swiss meringue has been the easiest and smoothest frosting for me to work with. You can look up the recipe, it’s super easy. Be sure it’s mock, not true Swiss meringue!
The heat from your hands will warm up the frosting as you pipe it. Take more breaks, work faster, or work earlier in the day or on cooler days to combat this.
