Quick hot sear at 450°F for 45 seconds to 1 minute each side followed by 3hr smoke at 225°F using blend of Apple, Maple and Hickory pellets. Turned out perfect for medium rare and then used the leftover steaks for Ramen, homemade broth and all. It was delicious although I wish I would have made the Ramen noodles from scratch as well.

  6. I believe the only acceptable way to heat up refrigerated rare beef is to slice it thin and dip it in a bowl of hot soup!

    No shade, personally I’da sliced it very thin and placed them on a plate next to the bowl, and dipped them one at a time in the broth the slices didn’t sit in the hot broth and overcook–sure looks good though!
