Every year my family makes a corned beef (actual meat) for St Patty’s Day. I usually got some veggies and brought my own protein. This year we’re estranged so I decided to make one for my husband and me to celebrate alone.

Couldn’t find a good recipe using a Juicy Marbles loin so I had to piece together different recipes.

I braised this bad boy in some spices for about 2 hours then rubbed him down with some brown sugar and brown mustard marinade. Broiled for about 10 minutes. Threw some baby potatoes, carrots and cabbage in the broth for maybe 30 minutes altogether and voila! Vegan corned beef n cabbage!

    Looks great. I tried Juicy Marbles a while back and immediately upon tasting it, I figured it would make great corned beef. I haven’t gotten around to actually trying to cook it as corned beef, but hopefully one of these days I will.
