I actually think your salsa looks better than what you were trying to re-create. What was the recipe that you used? Maybe char it a bit more?

You could try cooking the tomatoes in a cast iron pan, or just putting them on foil.

Get it as hot as that grill will allow you to go. Tbh if you want to experience what I’m talking about, grab your charcoal chimney when it’s ripping hot and roast on top of it.

So I didnt follow a recipe, I googled a bunch and couldn’t find anything that looked similar so I just guessed.
4 Serranos, 4 Arbol, 4 stalks of mexican green onion, 2 roma tomatoes, 4 cloves of garlic, 1 chile morita for a smokey taste. Salt to taste
Edit: Lime, forgot to mention it
It came out a little bitter and thick, not watery and oniony like the one at the restaurant. The one at the restaurant is my wife’s favorite so I want to recreate it

Pic 2 looks more like a long reduction; like I wouldn’t just smoke it a bit, I’d let it run in a pan until it was almost dehydrated.
