Mediterranean Tuna Salad (Erewhon Inspired)

Ingredients
• 2 cans tuna packed in oil
• 3 cucumbers, chopped
• 1 pint cherry tomatoes, sliced in half
• 1 red onion, thinly sliced
• 1 handful Kalamata olives
• 1 handful parsley, lightly chopped

Seasonings
• 2 tsp salt
• 2 tsp pepper
• 2 tsp garlic powder
• 2 tsp oregano
• Optional: 2 tsp za’atar seasoning

Dressing
• 4 tbsp olive oil
• 4 tbsp red wine vinegar

Instructions
1. Place the sliced onions in a bowl and sprinkle with 1 extra tablespoon red wine vinegar. Let them sit while you chop the rest of the veggies.
2. Add the cucumbers, cherry tomatoes, and olives to the bowl.
3. Sprinkle in the salt, pepper, garlic powder, oregano, and optional za’atar.
4. Add the tuna and gently mix everything together.
5. Pour in the olive oil and red wine vinegar, add the parsley, and toss until combined.
