An onion cake with actual onions in it. Last year I made an allium themed cake for a magazine launch, and everyone kept asking if it actually had alliums in it. So this time, I had to actually do it.
Chocolate cake, goat cheesecake mousse, caramelized onion and fig jam jam, honey buttercream.
Decorated to look like the cross section of a growing onion garden (even if I had to Frankenstein the roots and tops).

So…. Years back I infused vodka with black garlic and made an espresso martini with it. 1oz of dark chocolate sauce dash Aztec chocolate bitters. Shot of espresso and 2oz booze. Chocolate and allium is a match made in heaven.
Looks awesome. I’m definitely not an expert but would it be easier to caramelize the onions first and then add caramel? I just know it takes a good amount of time to get the onions right and I’d worry about burning the caramel. Looks AWESOME though.

Lovely finished product. Are the red onions used for decoration real raw onion? Perhaps next time you could do a caramelized onion compote within a layered candy coating and successive purple mirror glazed ‘onion layers’.
