I don’t eat baby potatoes anymore unless I grow them. Not sure if they are sprayed with chemicals to suppress sprout growth, Canada and US allow this, in UK they use an acid for this.

I actually just made this recipe on St. Patrick’s day (with the Guinness!) – it’s delicious but I would have added a bit less Guinness and tomato paste. It’s a bit bitter as written but some extra broth the next day helped balance it out
