In a corner of the Sapporo Central Wholesale Market, bustling with tourists, there’s a shop that has become a hot topic among ramen lovers. That shop is Tokuichi NOUILLES JAPONAISE, which opened in 2023. Supervised by the renowned French restaurant Le Musée, this spot is gaining attention for its unique bowl that combines ramen with a consommé soup made using French culinary techniques. Coupled with its unique location within the Sapporo Central Wholesale Market, it has been a popular spot with a constant line since its opening. This time, we’ll take a detailed look at the appeal of this talked-about ramen, including its limited-edition menu and the unique flavors you can only find here.
A Fusion of French Cuisine and Ramen. The Deciding Factor is the “Consommé Soup”

The ramen features a deep flavor, with a shoyu (soy sauce) tare added to a base of consommé soup carefully extracted using French techniques. By adding chicken oil infused with the aroma of a wood fire to the layered umami soup, it becomes a bowl that can also be enjoyed through its fragrance.

The fragrant aroma that spreads the moment the ramen arrives, and the impact of umami from the first sip. This is a one-of-a-kind bowl that fuses the charms of French cuisine and ramen.

The noodles are custom-made in collaboration with the long-established noodle factory Sudo Seimen. They are low-hydration, thin, straight noodles kneaded with the same bran used in the wood-fired shoyu, and their wheat aroma and firm texture harmonize perfectly with the soup. The carefully prepared toppings, such as chashu pork and seasoned egg, are also of high quality, further enhancing the satisfaction of the bowl.

The appeal of this shop isn’t just its regular menu. The “limited-edition ramen” using seasonal ingredients from Hokkaido also attracts many ramen fans. For example, in the past, they offered the “Atka Mackerel (Hokke) & Kelp Double Consommé Shoyu Ramen,” featuring hokke, a fish popular in Hokkaido. This bowl layered the umami of kelp in both the soup and the kaeshi (sauce base), and was further enhanced with an aromatic oil that condensed the umami of the hokke.

The shop is inside the Banzai Market at the Sapporo Central Wholesale Market, which is bustling with tourists.
The shop is a 6-minute walk from Nijuyonken Station on the Tozai Subway Line and a 10-minute walk from JR Soen Station. Parking is also available, so visiting by car is easy. Being in the market, it’s great that they open from 9 AM. It’s a popular spot for tourists, so you can enjoy delicious ramen and buy souvenirs at the same time.
When we spoke to the owner, they mentioned their desire to spread ramen, Japan’s national dish, to the world, and are planning to relocate overseas by 2028. This bowl is served with the owner’s passionate commitment, so now might be your chance to taste it in Sapporo.
