Eggs have always been the workhorse of the kitchen. Fry them, scramble them, boil them, repeat. That used to be the extent of it.

Scroll through TikTok now, however, and eggs are having something of a moment. Not the polite, British kind either. Think raw eggs whisked into steaming rice, sticky soy-cured yolks smashed over toast and soft-boiled eggs marinated in chilli, garlic and honey for days.

According to new research from British Lion Eggs, nearly eight in ten Gen Z Brits say they regularly stumble across new egg trends on social media, with many of those recipes borrowing from cuisines far beyond the UK – from Japanese tamago kake gohan to Korean “mayak” eggs.

It’s part of TikTok’s now familiar habit of taking something that already exists somewhere in the world and suddenly making it feel brand new again. For younger cooks, eggs are no longer just scrambled or fried – they’re the base of viral recipes that are quick, affordable and endlessly adaptable.

From Cajun egg boils and feta-fried eggs to Vietnamese egg coffee and high-protein chocolate pudding, these are the 12 egg trends currently blowing up online – and how to make them at home.

1. Cured egg yolks, two waysHoney and soy-cured egg yolks

A rich, savoury-sweet topping that turns runny yolks into a jammy condiment. Popular on TikTok, these cured yolks are typically served smashed over toast or grated over rice and noodles.

Serves: 4

Time: 15 minutes prep, 3-5 days curing

Ingredients:

4 egg yolks

120ml soy sauce

120ml runny honey

2cm fresh ginger, sliced

1 garlic clove, crushed

1 red chilli, sliced

½ tsp Sichuan peppercorns

1 star anise

1 clove

To serve:

4 slices toasted sourdough

Sea salt

Method:

1. Add the soy sauce, honey, ginger, garlic, chilli, peppercorns, star anise and clove to a small saucepan.

2. Heat gently until just beginning to simmer, then remove from the heat and allow to cool completely.

3. Pour the cooled mixture into a shallow container.

4. Carefully separate the egg yolks and place them into the marinade.

5. Cover and refrigerate for 3-5 days until the yolks are thick and jammy.

6. Remove from the marinade and place onto toasted sourdough.

7. Smash gently and drizzle with a little of the curing liquid and a pinch of sea salt.

Serving suggestion: Also delicious grated or stirred into hot rice, noodles or pasta.

Salt-cured egg yolks

A punchy umami condiment made by curing egg yolks in salt and sugar until firm enough to grate. Popular on TikTok for adding a rich, parmesan-like finish to pasta, rice and vegetables.

Serves: 4-6

Time: 15 minutes prep, 7 days curing

Ingredients:

6 egg yolks

200g fine sea salt

100g caster sugar

Method:

1. Mix the salt and sugar together in a bowl until well combined.

2. Spread about two thirds of the mixture evenly across a shallow tray or baking dish.

3. Use the back of a spoon to make six small indentations in the mixture.

4. Carefully separate the eggs, placing each yolk into one of the indentations.

5. Gently cover the yolks completely with the remaining salt mixture.

6. Cover the tray with cling film and refrigerate for 7 days.

7. After curing, carefully remove the yolks and brush off excess salt.

8. Place on a lined baking tray and dry in the oven at 90C/70C fan for 1-2 hours, until firm.

Serving suggestion: Grate finely over pasta, risotto, rice or roasted vegetables, just as you would parmesan.
