


Bacon –
0.25% cure #1, 2.5% kosher salt, 3% maple sugar. Cure for 10 days, flipping every day. Rinse and pat dry. **Lightly** season with Kosmos Killer Bee Honey Rub before smoking at 180°F over Kirkland pellets + hickory chunks to 150°F internal. Wrap and rest in fridge for a day before slicing and vacuum sealing.
