





I’m doing macarons with the italian merengue method and I’m using a hand mixer but I can’t get to stiff peaks while making the merengue, the maximum i mixed was almost 20 minutes💀 and I checked for the stiff peaks and never got it. Im wondering if its due to my hand mixer not mixing well but idk. I hope I can get a stand mixer soon

What kind of color is that? If it’s gel/liquid, it’s changing the consistency and you won’t get stiff enough peaks. Ideally – don’t add your color until after you’ve gotten your peaks
I only used a hand mixer and always get my meringue to stiff peaks (~10-12min). It’s likely the coloring or even vanilla and/or the timing at which you added those ingredients.
