used to be vegan and never really tracked protein, but I’m currently on a mission to make lasting changes—focusing on high-volume, cancer-fighting whole foods and skipping the nitrates.
I was actually inspired by that old-school "Skinnygirl" Frankel snack, but I beefed it up to be a legitimate, filling meal.
For under 300 calories, the bowl size is kind of ridiculous.
The Stats
• Calories: ~288 kcal
• Vibe: Salty, crunchy, and incredibly fresh.
The "Crunch-Factor" Build
• The Base: A massive amount of watercress (if’sapparently a nutrient powerhouse!) and mixed salad sprouts.
• The Protein: A whole tin of tuna mixed with low-fat cottage cheese (the ultimate volume-eating hack for creaminess without the mayo).
• The Crunch: Sliced radishes, spring onions, and a sprinkle of salad topper seeds.
• The Seasoning: A pinch of Everything Bagel Seasoning (a little goes a long way for that salty kick).
I’m still new to the protein-heavy world, but seeing this much food for 288 calories blew my mind. If you’re looking for a nitrate-free, high-protein meal that takes 22minutes to eat, this is it.
