I’m thinking to add potatoes to Kimchi stew. Would this work as an alternative to rice? I like both. But I feel like potatoes belong in this stew sometimes. 😁 Agree or heresy?

Thousand years of tradition and experiments, you thing they didn’t try mixing potatoes with kimchi? Simply put they don’t combine well

Blasphemy IMO but I’m not Korean. Maybe make a potato side dish for that craving or make gamjatang. Or you could take a small portion of soup and put it to the side add a small potato and see how it tastes.

I think potatoes would be delicious in a kimchi stew and I’m sad I haven’t thought to try it myself. I mean, they go well in doenjang jjigae and maeun gamja jorim so why not in stew 🤷♀️

Maybe try daikon instead? It might hold up better and absorb all those nice flavors? I like potato salad on the side with kimchi jjigae because it’s nice and cool and creamy so it balances nicely. But at the end of the day, I’m eating that jjigae no matter what.

I mean, i guess if you add potatoes you would be getting one step closer to army stew? Not heresy i’d say in that sense. Honestly when i mess up kimchi stew i just start adding punch of random ingredients, call it army stew, and call it a day

I’m not a chef, but I cook a lot and I am passionate about the chemistry that happens when food is cooked. I think adding potatoes to kimchi is not a bad idea, however, I think there are better ingredients. I think zucchini would work better if you don’t like daikon.
The reason potatoes might not be the perfect ingredient, is I think:
– the potato might absorb the flavor of the soup and might reduce its overall flavor. I don’t think it will be a life changing amount, but it might throw you off. Maybe if you fry / cook the potatoes first, take it out, and put it in the soup when the soup is almost done cooking, it might work. Otherwise the potato will be mushy, disintegrate or will absorb too much of the salt
– the potato might change the consistency of the soup and might turn it starchy or thick
I think something more neutral like zucchini, chayote, or opo might work better. Among those, i have only seen zucchini added to it. But i don’t see why the others won’t work

I’m wondering if cooking Kimchi might kill some of the good bacteria that Kimchi has. Because I don’t know i eat it cold, mainly because it’s very good for my colitis and that good bacteria.

You could put some kongnamul (soybean sprout?), or add some tteokguk tteok (ricecake soup ricecake) which is thinly sliced tteok for soup. That is kind of a replacement for rice I guess lol. Or put in ramyeon noodle (without any powder, just the noodle)
I am just a bit confused because I somehow have the memory of eating potato out of a kimchi jjigae, but judging by the reaction here, I might be thinking some other soup which I am remember as kimchi jjiage. I even asked my mother if she ever did it and she’s saying no.
