InterContinental Danang Announces New Culinary Leadership for MICHELIN-Starred Restaurant

InterContinental Danang Sun Peninsula Resort has appointed Jean-Louis Angulo as Chef de Cuisine at La Maison 1888, its French fine dining restaurant and the only MICHELIN-starred restaurant in Central Vietnam. The appointment marks a continuation of the restaurant’s culinary direction under the guidance of Chef Christian Le Squer.

Located within the resort on the Son Tra Peninsula, La Maison 1888 has established itself as a leading fine dining destination in the region.

In his new role, Jean-Louis Angulo will oversee the culinary operations at La Maison 1888. Jean-Louis Angulo will lead the kitchen team, manage menu execution, and ensure consistency in delivering the restaurant’s fine dining standards.

Jean-Louis Angulo will also work closely with Chef Christian Le Squer, who continues to oversee the restaurant’s culinary philosophy and direction.

Jean-Louis Angulo’s Career Shaped by MICHELIN-Starred Kitchens

Jean-Louis Angulo previously served as Sous Chef at La Maison 1888, a role he held for the past two years. Jean-Louis Angulo brings a strong background in fine dining, with experience across MICHELIN one, two, and three-star establishments.

Jean-Louis Angulo trained in Paris and has worked at Gordon Ramsay au Trianon in Versailles, L’Espadon at the Ritz Paris, and Le Cinq at Four Seasons Hotel George V Paris. At Le Cinq, Jean-Louis Angulo worked under Chef Christian Le Squer, further shaping his culinary approach.

Born in France to Peruvian parents, Jean-Louis Angulo’s early years across Europe and South America contributed to his exposure to diverse culinary influences.

La Maison 1888 Continues Its MICHELIN-Starred Legacy

La Maison 1888 is housed in a French Indochine-style mansion designed by Bill Bensley, featuring private dining rooms and an outdoor terrace overlooking the forest and ocean. The restaurant has previously been led by MICHELIN-starred chefs including Michel Roux and Pierre Gagnaire, and is currently overseen by Chef Christian Le Squer, who held three MICHELIN stars for 23 consecutive years.

Under this leadership, the restaurant continues to present fine dining cuisine focused on technique, presentation, and flavour.

Team Structure Supports Culinary Execution

Jean-Louis Angulo will be supported by a team of Vietnamese and international chefs. Jean-Louis Angulo will also work alongside Head Sommelier Amedeo Bellini and Assistant Sommelier Toan Nguyen, who manage the restaurant’s wine programme.
