🛒🥣 INGREDIENTS LIST:
For the Dough:
250g “00” or Plain Flour
1 Large Egg (to bind)
125ml Warm water
Pinch of salt
For the Beef Filling:
100g Beef Mince (regular fat 80/20)
1 Small Brown Onion (finely diced or grated, remove excess water if processing)
½ tsp Sweet Paprika
Salt & Black Pepper to season
Drizzle of Olive Oil
For the Garlic Sauce:
1 cup Yoghurt
2 Garlic cloves (crushed) + salt to season
Serving Heated Butter:
25g Butter
2 tsp Capsicum/Pepper paste
1 tbsp Starchy pasta water (from the pot)
Dried mint for garnish
👨🍳 METHOD:
The Dough: Mix flour, water and salt. Add the egg, kneading until smooth (5-10 minutes). Rest for 30 mins.
The Filling: Mix beef mince, onion, paprika, salt, pepper, and olive oil.
Shape: Roll dough thin (1.5-2mm) using a rolling pin or pasta roller. Cut into roughly 2.5cm squares. Place a tiny bit of filling in each and pinch the corners to seal into a triangle.
Set: Pop them in the freezer for 30-60 minutes to firm up to freeze, before placing in bag or container for long term storage, or if using now just chuck in the boiling water.
Boil: Cook in boiling salted water for 5 minutes (until they float). Keep 1 tbsp of the cooking water!
The Sauce: Mix crushed garlic and salt into the yoghurt. In a separate small pan, melt butter with the pepper paste and the reserved starchy water to thicken.
Serve: Place dumplings in a bowl with a splash of pasta water. Top with garlic yoghurt, the warm capsicum butter, and a sprinkle of mint. Mix and enjoy my most favourite dish on this planet!
