

I wet brined it for 1.5 hours in Japanese barbecue sauce. Cast iron on almost the highest temp I could with tallow. Cut into super thin slices served with rice Japanese barbecue sauce. 1st time I ever wet brined a steak. Prime filet from Sam’s club.

This is called black and blue in most kitchens, it’s the best especially if you cook over a wood flame.
