Giant raviolo with "raw" egg yolk and truffle butter. The filling is made with ricotta ad a mushroom duxelle (and a yolk).

Quite a bit of work but all 4 portions turned out great, in the end the most difficult part was making pasta from scratch (next time I will definitely use the machine).
