Neighbourhood wine bar and restaurant Delmonte is set to find its home in Carlton’s landmark King and Godfree building this winter.
The concept joins a run of new venues from Jamie Valmorbida, including Johnny’s Green Room, Pidapipo, and Garfield Pizzeria.
Delmonte, meaning ‘from the mountains’ is a reference to Valmorbida’s grandfather Carlo, who was born in Valli del Pasubio, in Italy’s mountainous Veneto region.
Honouring the original deli and wine shop that once occupied the site, and drawing on Valmorbida’s personal family history, Delmonte nods to heritage, produce, and place.

Diana Desensi (Saint George, Julie, Pt. Leo Estate) joins the project as head chef, alongside alongside Executive Chef Mark Glenn, and under the guidance of King and Godfree Culinary Director Karen Martini.
A wood oven and grill anchors the menu, which is Italian at its core. It will also spotlight cured meats, cheese, bread, and wine.
George McCullough (GUM Wine, Carnation Canteen, Garfield Pizzeria) is curating the wine program, with a focus on Italian wine, particularly the Piedmont region.
Delmonte will open in winter 2026, at 293-297 Lygon Street, Carlton. More to come.
