this is my first time making carbonara, and I need honest answers, did I cook?

    The eggs are a bit overcooked. Try using more pasta water next time.

    I’d eat it anyway! Probably delicious.

    I’d suggest you to use a short pasta (like rigatoni maybe) and wait for the absolute last seconds, with the heat off, to add the eggs and cheese, so you get the pasta much more creamy and not so dry.

    Do not discard the water which you cooked the pasta in; always keep it aside in a bowl in the sink maybe, and keep adding it when you toss/emulsify the pasta until it’s perfectly creamy (or the way you like it, I mean)

    As others have said more pasta water. My wife uses linguine Barilla no13 or Barilla al bronzo. Also maybe 50ml cream which is not traditional.
