Next time: CUT AGAINST the grain.

For everyone freaking out about cutting with the grain, this is very typical for serving Picanha. Because as you eat it, you will personally be cutting against the grain. For example, think about how you would serve and eat a skirt steak.

Couple questions:
1. How did you dry it off after sv for a nice sear? Pat dry + fridge? Something else?
2. 132F is your desired temp, did searing it raise the internal temp past 132F? I’m never sure if I should sv at my desired temp or a bit below because searing may raise the internal temp

Andy Cooks did a video on the grain cut.. Blind taste he liked with more.. I have cooked picanha a ton of times and it makes almost 0 difference
