Moroccan Chicken Pastilla🇲🇦
Today my kitchen smelled like home again. The warm spices, the slow-cooked chicken, the crunch of golden pastry after it has been baked. Everything just took me back to Morocco. 🇲🇦
🇺🇸Ingredients
Chicken filling:
800g chicken ( I mixed chicken legs and breast)
800g onion
2 garlic cloves
50 ml olive oil
Cinnamon stick
A bunch of parsley
1 tbsp salt
1 tbsp ginger powder
1 tbsp turmeric powder
1/2 tbsp black pepper
Pinch of Saffron (optional)
1 tbsp butter
2 tbsp powdered sugar
1 tbsp cinnamon powder
3 eggs (optional)
Almond layer:
300g fried or roasted peeled almonds, finely crushed
50 ml orange blossom water
2 tbsp cinnamon powder
2 tbsp powdered sugar
Pinch of mastic gum
For assembling:
Phyllo sheets (or Moroccan pastilla paper, if they are available)
Melted butter
