    Next try 2x the wine and reduce it by half before adding the stock you won’t be disappointed

    okay but the *collagen breakdown* on those looks insane, that’s the kind of fall-apart texture that makes you wonder why anyone pays for short ribs when shanks exist (seriously, the marrow situation alone).

    I got these at Costco too, yesterday. Probably going to sear them first before I braise them, though.

    After you sear the meat you should put some serious color on your mirepoix then add your liquid, also remove a few cups of braise liquid skin the fat and reduce for a finishing sauce
