




Holy smokes, y’all…..I decided to try making pastrami this weekend….I kind of faked it by buying corned beef and soaking it for 24hrs to de-salinate it instead of making it from scratch. I made a rub of ground whole peppercorns and ground coriander seeds and then smoked it on my Big Green Egg for 7hrs at 250. Unbelievably good. We had Rueben’s and pastrami & swiss on rye sammie’s for dinner tonight!
