A perfectly crafted plate of pasta is hard to resist, especially in a state where Italian cuisine shines brightest.

International finance and business website Business Insider recently published its list of the most iconic Italian restaurants in every state.

New Jersey’s recipient: the acclaimed Chef Vola’s in Atlantic City.

Here’s what they said about the century-old gem:

“Chef Vola’s has been a hidden gem in Atlantic City since 1921, operating out of a small house in a residential neighborhood. The famously hard-to-book restaurant is known for classic dishes like veal Parmesan and rigatoni, along with its old-school, cash-only charm and loyal following.”

The longstanding Italian establishment is one of the toughest reservations to get in the state, beloved for its veal parm, banana cream pie, pasta and crab cakes.

Chef Vola’s has been heralded as one of the state’s best Italian eateries for more than 100 years — it opened in 1921. The Atlantic City eatery landed the No. 14 spot on NJ.com’s recent ranking of New Jersey’s 51 greatest Italian restaurants, and No. 7 on NJ.com’s list of the best restaurants in Atlantic City.

Business Insider ranked the eateries “based on customer reviews, local history, longevity, cultural significance, and the standout dishes that keep diners coming back.”

Lombardi’s in New York, The Victor Cafe in Philadelphia and Mystic Pizza in Connecticut also made the list.
