OVERNIGHT RASPBERRY, COCONUT and CHOCOLATE WEETABIX

for 2 – or half for breakfast and the other half during the day 🙂

SERVES 2 (Calories 569 / Carbs 70.5g / Fat 13.8g / Protein 30.1.3g)

2 crushed Weetabix mixed with ¼ tsp ground nutmeg+14g raisins+10g isolate whey protein powder+1 tsp desiccated coconut+2tsp cacao powder THEN 95ml skimmed milk mixed with 1 tsp vanilla extract poured on top and packed down.

TOPPING: 150g 0% fat free raspberry Greek yogurt mixed with 40g of raspberries (I used frozen that had been defrosted)+3tsps of chia seeds+1 tsp runny honey+sprinkle 7g of crushed 70% dark plain chocolate

Place in the fridge for at least 3 hours or overnight.

The dish I use is 5.7ins x 4.1ins x 1.8ins – capacity 12.5oz/370ml (enough for 2 helpings)
