The last month of school has been pure chaos and hellfire! I haven't been to the gym and I finally just got my hair cut lol! I'm not going to pretend that I've always been perfect (stress candy is a thing) but here are some of my successes during a very tumultuous time.

1) Shrimp stir-fry.

2) Backyard eggs (traded my homemade kombucha with a friend), avocado on multigrain sourdough from the bakery. Local sauerkraut. Fried tomato & onion. Black coffee. My lovely kombucha.

3) Borscht prepared from a recipe a Ukrainian co-worker gave me. I required a small amount of pork rib which gave it a lovely flavour. But my own borscht recipe is either vegetarian or uses ground turkey.

4) Quick store bought hummus on crappy toast with red pepper, cucumber and green olive. Greek yogurt with kiwi and sunflower seeds. My sports nutrition assignment.

5) Breakfast burrito – eggs, refined beans, kale, cheese, yogurt, salsa. I forgot that soft scrambled eggs are lovely except for when you want a firmer texture in a burrito!

6) Work lunch: lentil dahl with fried paneer and brown basmati.

7) Other half of my work lunch: pink salmon (frozen) with steamed brussel sprouts and carrots.

8) Fried smelts with avocado and brussel sprouts on top of black eyed peas (hoppin' john) and rice.
