​Hi everyone!

​I’m a proud owner of a Musso Stella 5030. I love this machine—the cooling power is insane and the build quality is unmatched. However, I’m looking to optimize its performance even further.

​As most owners know, the gap between the stainless steel paddle and the bowl allows a thin layer of frozen mix to build up. While the gelato is already great, I want to eliminate that "crust" to improve heat exchange and, most importantly, to maximize overrun like professional batch freezers do.

​I’ve seen some custom-made paddles with Teflon or Delrin scrapers online, but I can't find a reliable source or shop that currently sells them.

​Does anyone have a link to a 3rd party manufacturer for these blades?

​Has anyone tried a DIY modification (like food-safe 3D printed clips) that actually lasts?

​I’m looking for a "pro" upgrade for a "pro" machine. Thanks for any leads!

    I have the musso pollo 5030 but also very interested in this, I really hope someone comes through on this!

    Edit: what I’ve started doing, curious people’s thoughts, is turning the cooling off when I hit ~16°F and letting the paddle turn for another minute or two, then l will turn it off and scrape the sides and bottom and then turn the paddle back on to incorporate that stuff. You have to make sure you don’t have so much that the paddle has trouble starting back up. I dunno, thoughts?

    It’s a workaround, but it’s not the solution. I’ve seen other machines, such as the Cube 750, adopt blades with Teflon scrapers. This allows for shorter stirring times.

    It’s not really gonna increase the overrun. Issue is the speed is too low but this machine is designed for gelato
