
**Ingredients**
* 2 large onions
* 200 g block mozzarella
* 50 g flour
* 50 g breadcrumbs
* 3 beaten eggs
* 1 teaspoon salt
* A pinch of pepper
* 500 ml frying oil

**Instructions**
Peel the onions and cut them crosswise into three slices, keeping the core so you get nice rings. Separate the onion rings.
Cut the mozzarella into thin slices, then cut each slice into 4 pieces to make strips about 1 cm wide.
Wrap each mozzarella strip inside an onion ring, then place a second onion ring inside it so the mozzarella strip is trapped between the two rings.
Place them in the freezer for one hour so the onion and mozzarella stick together well.
Heat the oil in a saucepan or deep fryer. Mix the flour with the salt and pepper. Also salt the breadcrumbs.
Dip each frozen onion ring in the flour, then in the egg, then in the breadcrumbs. If needed, repeat the egg and breadcrumbs step to get a thicker coating.
When the oil is hot, fry each onion ring for about 5 minutes, then drain on paper towels.
If you have mozzarella left, cut it into sticks, coat them in flour, egg, and breadcrumbs, then fry for about 1 minute (be careful not to overcook, as the mozzarella may melt and leak out).
Drain on paper towels and serve immediately.
