Everyone uses plain vanilla, but you can also add almond extract, rose water or orange blossom water to do something a little different. You can even use more than one flavoring. I bet if you could find a freeze dried fruit powder that’s ground to the same fineness as cake flour you could sub some of that in for a different flavor and color.
